Hello Kenarry readers! I am Lisa from Life on Merlin here with a great recipe for a quick, easy, and healthy breakfast that can be prepared in advance.

Easy Overnight Quinoa Breakfast Recipe

It doesn’t matter if you work outside the home or are a stay-at-home mom…it is always hard to find the time to take care of ourselves by eating healthy. I love anything that I can prepare in advance and the easier the better!

A while ago, I created a Simple Chia Seeds Overnight Oats Recipe. I love this recipe and eat it all the time. Being a vegetarian, I eat a lot of quinoa. I always seem to have leftover quinoa in the refrigerator so I thought…what if I substituted quinoa for the oats? I know the answer….A yummy breakfast!

Here’s How You Make This Easy Overnight Quinoa Breakfast!

Pour cooked quinoa into a mason jar.

Overnight Quinoa Breakfast

Add almond milk. You can use vanilla if you want but I usually use plain.

Quinoa Breakfast

Add the yogurt. I usually use vanilla but of course, use whatever you want. Drop in the chia seeds and vanilla extract.

Dump in a handful of blueberries and one heaping tablespoon of almond slivers.

Easy Quinoa Breakfast

Close the jar really tight and shake, shake, shake!

Quinoa Jar Breakfast

Put it in the refrigerator and enjoy the next morning. That’s it! Super healthy, good for you, easy, and delicious!

If you want it a little sweeter, add some honey. Feel free to add any other extras you want…bananas, cinnamon, apples, dried cranberries…the possibilities are endless.

Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup almond milk
  • 1/4 cup yogurt
  • 1 tablespoon chia seeds
  • 1 teaspoon Vanilla Extract
  • 1 handful blueberries
  • 1 tablespoon almond slivers

Instructions

  • Put everything into a mason jar.
  • Shake until mixed well.
  • Refrigerate overnight.
  • Enjoy!

    1. Thanks for stopping by Bren! When I make quinoa, I often make a batch with “extra” so it would be perfect to use the cooked leftovers for a quick overnight breakfast like this. I don’t have a lot of quinoa experience though. Have you found other recipes where the quinoa can be uncooked in a breakfast recipe like this? I’d love to learn more!

    2. It’s my understanding that quinoa isn’t all that healthy if eaten raw. I don’t remember the exact reason, something to do with saponins, but if you want to know more, google it.
      I’ll be giving this a try soon, sounds yum to me.

      We haven’t tried this without the yogurt so we can’t say for sure. It would definitely change the consistency a bit. If you try it without the yogurt, please circle back and let us know how it turned out!
