Arugula, Fennel, and Avocado Salad

Ingredients

  • 6 cups of arugula
  • 4 cups of thinly sliced fennel
  • 1-3/4 cups of avocado
  • 1/3 cup of lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon Salt
  • 2 tablespoons of shredded Parmesan cheese

Instructions

  • Combine the arugula, fennel, avocado, lemon juice, olive oil and salt.
  • Serve topped with Parmesan cheese
