Ingredients
1lb.Ground Beef
1/2heaping cup green pepperdiced
1/2heaping cup oniondiced
1/2heaping cup carrotssliced (I used baby carrots)
3Garlic Clovesminced
4cupschicken broth
214.5 oz cans diced tomatoes with Italian seasonings, undrained
18 oz package cream cheese, softened
19 oz package fresh cheese tortellini
115 oz can cannelini beans, drained and rinsed
2heaping cups spinachshredded
salt and pepperto taste
Instructions
In a large soup pot, brown ground beef with green pepper, onion, carrots, and garlic. Drain fat and return pot to the stove.
Add in the chicken broth and tomatoes and bring to a boil. Reduce heat, add the cream cheese and simmer covered for 10 minutes, stirring occasionally.
Add in the tortellini and simmer for 5 minutes. Add in the beans and spinach, and season to taste with salt and pepper. Cook for an additional 1-2 minutes, or until spinach is wilted. Enjoy!
