Shredded Beef Recipe: Easy Slow Cooker Tacos

Ingredients

  • 2.5 - 3 pound beef round roast
  • 1 - 10 oz. can of hot red enchilada sauce
  • 3/4 cup chopped onion
  • 1 oz packet of taco seasoning 1/3 cup

Instructions

  • Lightly coat the inside of a slow cooker with cooking spray.
  • Trim the fat off the roast and then place in the bottom of the slow cooker.
  • Pour the can of enchilada sauce over the beef roast.
  • Add the chopped onion and sprinkle with taco seasoning.
  • Cover and cook on high for four hours or low for 8 hours.
  • Shred the beef with two forks.
  • Serve on tortillas with lettuce, tomato and cheese. Enjoy!
