Roasted Carrots With Dill

Ingredients

  • 3/4 lb Baby Carrots
  • tablespoons Butter Or Margarine
  • 1 teaspoon Dried Dill Weed
  • Salt To Taste
  • Pepper To Taste

Instructions

  • Preheat the oven to 375 degrees.
  • Coat a 9 x 9 baking dish with a thin layer of cooking spray. Spread a single layer of baby carrots in the bottom of the dish.
  • Dab the carrots with 1 ½ tbs butter or margarine.
  • Sprinkle the carrots with dill weed, black pepper and salt to taste.
  • Bake for 55 minutes until the carrots are soft, but not mushy. Be sure to stir every 10-15 minutes so that the butter and spices become evenly distributed among the carrots. If you cut the carrots into “coins," you can probably reduce the overall baking time by 10-15 minutes.
