Ingredients
3cupsof elbow macaroni or mini penne
1cupdiced carrots
1cupdiced celery
1/2cupDiced Onion
1cupMiracle Whip or mayonnaise
2tablespoonsof mustard
1/4teaspoonGarlic Powder
1teaspoonSalt
1/4teaspoonBlack Pepper
2teaspoonsSugar
6hard boiled eggs
Paprika to garnishoptional
Instructions
Fill a large pan with water and bring to a boil. Add 3 cups of macaroni or mini penne. Cook for 10 minutes.
Drain the macaroni or mini penne in a colander and rinse with very cold water.
Dice carrots, celery and onion. Onion should be finely chopped. You want the flavor, but not large chunks.
In a large mixing bowl, combine Miracle Whip or mayonnaise, mustard, garlic powder, salt, black pepper and sugar.
Add the carrot, celery and onion into the large mixing bowl and stir.
Peel the hard boiled eggs. Carefully slice two of them and set aside. Chop the remaining four eggs and add to the mixing bowl.
Pour macaroni or mini penne into the mixing bowl and stir until the macaroni is well coated.
Transfer the macaroni salad into a serving dish.
Place sliced eggs on top and sprinkle with paprika if desired.
Cover and refrigerate until you're ready to serve. Enjoy!
