Ingredients
1.5cupswater
¾cupbrown sugarlight or dark
1cupwhite sugar
½tspground nutmeg
½tspground ginger
½tspground cloves
2tspground cinnamon
¼cuppumpkin puree
1½tbspvanilla extract
Instructions
In a medium saucepan, add both sugars and water. Simmer on medium-low heat until the sugar dissolves.
Reduce the heat to low and whisk in cloves, nutmeg, cinnamon, ginger, and pumpkin puree.
Simmer for 8 minutes, stirring constantly to prevent the mixture from coming to a boil.
Remove from the heat and strain through a mesh strainer.
Let the syrup cool to room temperature before mixing in the vanilla extract.
Store in an airtight container.
Notes
Yield: 2 cups. Syrup can be stored at room temperature for up to 3 weeks, or 1 to 2 months in the refrigerator.
