1/2cupgranulated white sugar plus more for rolling
1egg room temperature
Preheat oven to 350 degrees. Line a baking sheet with a silicone baking mat.
Mix together dry ingredients in a bowl. Set aside.
In the bowl of a stand mixer, add peanut butter and butter. Mix on medium until well combined.
Add sugars and then mix 2-3 minutes, or until well combined.
Add egg and vanilla. Stir to combine.
Slowly add in dry ingredients and mix for 30 seconds, do not overmix.
Take 2 tbsp of cookie dough and roll into a ball. Roll in granulated sugar and place on cookie sheet. Replace until no dough remains. Bake on bottom oven rack for 9-10 minutes. Remove promptly from oven and let sit on cookie sheet for 5 minutes. Remove from sheet and place on cooling rack.
Once cool, store in an airtight container for 5 days, or freeze.
