Ingredients

stick butter
softened (about ½ cup)

cup
granulated sugar

cup
brown sugar
packed

large egg
room temperature

vanilla extract

all-purpose flour

baking soda

salt

ground cinnamon

ground nutmeg

rolled oats
Instructions
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper and set aside.
In a large mixing bowl, cream together butter and both sugars.
Add egg and vanilla extract and mix thoroughly.
Next, add all dry ingredients: flour, baking soda, salt, cinnamon, nutmeg and rolled oats. Combine well.
Roll the cookie batter into one-inch spheres and place on lined cookie sheet. 12 should fit on nicely on a baking sheet.
Flatten each cookie dough sphere slightly with a fork.
Bake for 8 to 10 minutes. Allow to cool on a wire rack before serving.
