Ingredients
1cupquinoarinsed
1 1/2cupslow sodium chicken broth
1Medium Oniondiced
1cloveGarlicminced
1 10oz.can of diced tomatoes with green chilies
1teaspoonCumin
1 15oz.can of black beansrinsed and drained
1cupFrozen Corn
salt and pepper to taste
juice of half a lime
1/3cupcilantrochopped
Instructions
Rinse the quinoa for several minutes in a mesh strainer.
Add all ingredients, except cilantro, to a saucepan, and bring to a boil over medium-high heat.
Continue to cook until all liquid has absorbed, stirring frequently.
