  • 1 lb ground beef
  • 1/2 onion diced
  • 1/2 pepper diced
  • 1 cup salsa
  • 2 8 oz cans tomato sauce
  • 1 can kidney beans drained and rinsed
  • 3 tbsp chili seasoning
  • 2 tsp cumin
  • salt and pepper to taste
  • 1 1/2 cups shredded cheese
  • garnishes, additional cheese, green onion, tortilla strips, hot sauce
  • 1/2 lb elbow pasta or shell pasta
  • 1 cup water

  • Add ground beef to a preheated nonstick pan. Add the pepper and onion and cook until ground beef is browned.
  • Add salsa, tomato sauce, kidney beans, and seasonings. Stir well.
  • Add the pasta and stir well. Make sure all the noodles are covered by liquid. If they are not covered, add additional salsa, tomato sauce, or water. Cook uncovered, stirring occasionally to prevent sticking. Add water as needed to keep noodles submerged. Let cook for 10-12 minutes, or until noodles are tender.
  • Add cheese and stir well. Serve immediately with garnishes.
