Ingredients
1lbground beef
1/2oniondiced
1/2pepperdiced
1cupsalsa
28 oz canstomato sauce
1cankidney beansdrained and rinsed
3tbspchili seasoning
2tspcumin
salt and pepper to taste
1 1/2cupsshredded cheese
garnishes, additional cheese, green onion, tortilla strips, hot sauce
1/2lbelbow pasta or shell pasta
1cupwater
Instructions
Add ground beef to a preheated nonstick pan. Add the pepper and onion and cook until ground beef is browned.
Add salsa, tomato sauce, kidney beans, and seasonings. Stir well.
Add the pasta and stir well. Make sure all the noodles are covered by liquid. If they are not covered, add additional salsa, tomato sauce, or water. Cook uncovered, stirring occasionally to prevent sticking. Add water as needed to keep noodles submerged. Let cook for 10-12 minutes, or until noodles are tender.
Add cheese and stir well. Serve immediately with garnishes.
