In a mixing bowl, whisk together the sugar, milk and vanilla until a thin icing forms. Set aside.
On a flat floured surface, roll out the pie crust and cut out 3”x4” rectangles. You can use a knife or a pizza cutter for easy cutting.
Lay out one rectangle and place 1-2 tablespoons of Nutella in the center of a rectangle and spread it out, leaving a 1/4” edge.
In a small bowl, beat the egg to create an egg wash. Wash the edge of the rectangle with the egg and place top rectangle on. Press out the air and seal the edges. Using a fork or a crimper, crimp the edges of the pop tart.
Brush the top of the pop tart with the egg wash use a toothpick to prick air holes.
Place tart in the air fryer basket and cook on 350° for 6 minutes or until golden brown.
Let cool to room temp and then ice with the sugar mixture and then sprinkle the tart with the chocolate sprinkles.
