Hi everyone! I’m Ashlyn from Belle of the Kitchen and I’m back again for a special birthday edition of Ideas for the Kitchen! Today I’m sharing some Cake Batter Bars, which are chock-full of sprinkles and delicious birthday cake flavor. They are one of my family’s favorite sweet treats!

The Perfect Birthday Dessert

Carrie and I were pretty excited to discover that we both have March birthdays, which shouldn’t have come as too much of a surprise since we seem to have quite a bit in common already! 🙂 We decided to celebrate with all of you by sharing birthday themed recipes, and I jumped at the opportunity to make something cake batter flavored.

When I was in college, our dormitory was within walking distance to a lot of great restaurants, shops, etc. Sometimes after eating dinner either at the dining hall or downtown, my friends and I would stop at Cold Stone Creamery for a little treat. I tried out the cake batter ice cream one day, and that’s where the love affair with all things cake batter began.

Cake Bars Made with Coconut Oil

I make these with coconut oil, which gives them a wonderful texture and flavor. I have to immediately give away about half of the pan every time I make these, or else my husband and I are bound to plow through the entire thing within a 24 hour period. I wish I was kidding!

Can you freeze the cake batter bars?

Yes, you definitely can freeze them. First, bake the bars and then let them cool completely.

Then, lay them in a single layer in an extra large zipped-top freezer bag. Close the bag, making sure to get out any extra air.

If you want, you could also freeze them wrapped individually, so you can thaw one at a time instead of having to thaw the entire batch.

School Lunch or Class Treats

These would make a perfect birthday dessert for packing in your kiddo’s lunch, or for taking to school for class treats! Honestly, they make for a great anytime treat, birthday related or not, and I hope you enjoy them!

Cake Batter Bars

Course: Dessert
Servings: 16 bars

Ingredients

  • 1 box yellow cake mix
  • 1/3 cup sprinkles
  • 1/3 cup Coconut Oil melted
  • 1/3 cup milk
  • 1 large egg
  • 1/2 cup white chocolate chips

Instructions

  • Preheat oven to 350 degrees. Grease an 8x8 baking pan and set aside.
  • In a large bowl, combine cake mix and sprinkles. Stir in coconut oil, milk, and egg, mixing well to combine. Stir in white chocolate chips. Batter will be thick.
  • Spread batter into prepared baking pan. Bake in the preheated oven for 30-35 minutes, or until toothpick inserted in center comes out clean.
  • Cool on a wire rack before cutting. Enjoy!
