Crust
1cupflour
1cup quick oats
1/2cup brown sugar packed
1stick butter
2teaspoonscinnamon
1/4teaspoonbaking soda
Pumpkin Filling
1cuppumpkin puree
3tablespoonsbrown sugar
1/2teaspoonnutmeg
1/2tablespooncinnamon
Instructions
Preheat oven to 350 degrees. Line a 8x8 pan with parchment paper or spray well with non-stick spray.
Add the flour, oats, sugar, butter, cinnamon, and baking soda to the bowl. Use a pastry cutter or two forks to cut the butter in until you have a crumbly mixture. You could also process this in a food processor if you have one.
Spread half of the mixture into the prepared pan and press to flatten in an even layer.
Stir together the pumpkin, brown sugar, cinnamon, and nutmeg, until combined. Spread into an even layer over the oat mixture.
Sprinkle remaining oat mixture over the top.
Bake for 35 minutes or until golden brown.
Serve warm or at room temperature. You can store on the counter for up to 3 days.
Notes
To make this recipe lighter, you can substitute half the butter for either apple sauce or mashed banana.
