These yummy Pumpkin Granola Bars are the perfect fall-flavored snack. Deliciously sweet pumpkin is layered between a crumbly oat mixture.
Hi everyone! Amanda here from Old House to New Home, sharing my final fall recipe of the season. These Pumpkin Granola Bars are super easy, which is a necessity for any baking recipe that I make! What I love about this recipe is that it isn’t the traditional pumpkin dessert recipe. This recipe is more of a snack, that can be eaten after school or for breakfast, without the guilt!
Easy Homemade Pumpkin Snack Bars
Have you eaten a lot of delicious pumpkin treats yet this fall? Pumpkin has a few more weeks to shine before it is time for peppermint to take over! I love pumpkin in all forms, but I usually stick to the typical desserts. I don’t know why I never thought to make a bar like this before! It makes it acceptable to eat pumpkin at all times of the day!
How to Make pumpkin granola bars
These are seriously easy. You make the granola crust and the pumpkin filling. A layer of the oatmeal goes down into the pan, top with the pumpkin filling, and then another layer of crust. Bake until golden brown and you have a super easy snack!

Yes! You can freeze these in an airtight container for up to four weeks. You can also store these at room temperature for 3-5 days, covered on your counter.

Pumpkin Granola Bars

Pumpkin Filling
- 1 cup pumpkin puree
- 3 tablespoons brown sugar
- 1/2 teaspoon nutmeg
- 1/2 tablespoon cinnamon
Instructions
- Preheat oven to 350 degrees. Line a 8×8 pan with parchment paper or spray well with non-stick spray.
- Add the flour, oats, sugar, butter, cinnamon, and baking soda to the bowl. Use a pastry cutter or two forks to cut the butter in until you have a crumbly mixture. You could also process this in a food processor if you have one.
- Spread half of the mixture into the prepared pan and press to flatten in an even layer.
- Stir together the pumpkin, brown sugar, cinnamon, and nutmeg, until combined. Spread into an even layer over the oat mixture.
- Sprinkle remaining oat mixture over the top.
- Bake for 35 minutes or until golden brown.
- Serve warm or at room temperature. You can store on the counter for up to 3 days.
