Preheat the oven to 375 degrees.
Coat a 9 x 9 baking dish with a thin layer of cooking spray. Spread a single layer of baby carrots in the bottom of the dish.
Dab the carrots with 1 ½ tbs butter or margarine.
Sprinkle the carrots with dill weed, black pepper and salt to taste.
Bake for 55 minutes until the carrots are soft, but not mushy. Be sure to stir every 10-15 minutes so that the butter and spices become evenly distributed among the carrots. If you cut the carrots into “coins," you can probably reduce the overall baking time by 10-15 minutes.
