Chocolate Peppermint Cake Mix Cookies
Ingredients:
- 1 box Devil’s Food Chocolate Cake Mix
- 1 teaspoon Baking Powder
- 2 large Eggs
- 1/3 cup Canola Oil (or another oil)
- 1/2 teaspoon Peppermint Extract (or 1 teaspoon Vanilla)
- 1 bag White Chocolate Chips, divided
- 6 Candy Canes, crushed
Directions:
- Preheat oven to 350F degrees and prepare a cookie sheet with parchment paper.
- Mix the dry ingredients in a medium size mixing bowl then set it aside. Then whisk eggs, oil and peppermint extract together in a small bowl until smooth. Pour the wet mixture over the dry mixture then mix with a wooden spoon or spatula until well combined.
- Roll cookie dough into balls then place them onto the prepared cookie sheet. Bake them for 10 minutes. Allow the cookies to cool completely before moving on to the next step.
- After the cookies have cooled place a sheet of wax paper on a cookie sheet or the counter.
- Crush candy canes by placing them in a plastic bag then break them into pieces using a rolling pin or the back of a spoon.
- Add half of White Chocolate Chips to a microwavable bowl (if you prefer you can melt them all at once; I like splitting the bag to ensure my chocolate stays smooth). Heat in the microwave on high for 45-60 seconds. Then stir the white chocolate with a spoon until all of the chips have melted.
- Dip half of each cookie into the melted chocolate, place them on the wax paper then sprinkle crushed candy cane over the cookies before the chocolate sets.
- Chill for 15-20 minutes or until the cookies have set then store them in an airtight container or place them in a large jar (like these pretzel rods) to give as a gift.
