These Ham, Egg, Cheese and Bacon Breakfast Muffins are a simple breakfast recipe that is delicious fresh out of the oven or made ahead and reheated.

Hey there Kenarry readers! Trish here and I brought along a little shock from my corner of the web, TrishSutton.com. Are you ready for this? Summer is upon us. Yep, I said it. SUMMER is just days away. Can you believe it?
There is ALWAYS a reason to make things “simple” at our house and summer morning breakfasts are no different. Along with that shocking newsflash of summer being just days away I brought a super simple breakfast recipe that is delicious fresh out of the oven or made ahead and reheated on the go.
Ham, Egg, Cheese & Bacon Breakfast Muffins
Ingredients:
- 12 slices Deli Sliced Ham
- 6 Medium Eggs
- Hash Browns, cooked
- 3/4 Cup Shredded Cheese
- Bacon Pieces
- Salt and pepper
Directions:
Preheat oven to 400 degrees.
Generously coat a muffin tin with cooking spray then press one slice of ham into each muffin tin creating a hole in the middle.
Add one tablespoon of cooked Hash Browns on top of the sliced ham. Then sprinkle with a pinch of shredded cheese.
Top Ham, Egg, Cheese & Bacon Breakfast Muffins with half a teaspoon of bacon pieces. (I use about half a jar of ‘Real Bacon Pieces’ however a couple slices of cooked bacon would work perfect.)
Beat eggs in a large mixing bowl, mix in the desired amount of salt and pepper then pour 1/4 cup of the blended eggs into each muffin tin.
Bake 18-20 minutes, or until the eggs are set and the tops just start to lightly brown.
Remove the pan from the oven then allow these Ham, Egg, Cheese & Bacon Breakfast Muffins to rest for 2-3 minutes before using a spoon or butter knife to loosen the edges and scoop out each breakfast muffin. Serve warm.

These protein packed muffins can be stored in an airtight container in the refrigerator for up to five days. Simply grab a breakfast muffin out of the fridge, warm it in the microwave for 30-45 seconds and enjoy! We love to serve these for a quick weeknight dinner too!
