Hello everyone! Amanda here from Old House to New Home, sharing one of my go to Instant Pot recipes, Creamy Salsa Chicken. I have been making salsa chicken for years, usually in my slow cooker, but I have to admit, it is even better in the Instant Pot, and way faster!
I love how versatile this recipe is! It can be served so many different ways! In a taco, over rice, in a burrito bowl, or even just on its own! It is the perfect flavor filled base for so many dinners! My favorite way is to tuck it inside a quesadilla!
How to Make Creamy Instant Pot Mexican Chicken with Salsa

What you need:

Kitchen or Craft/DIY Tools Needed:
Supplies or Ingredients Needed:
- 1 lb chicken breast
- 12 oz of your favorite salsa
- 4 oz cream cheese
- 1/4 cup sour cream
- juice of 1 lime
1. Cook chicken.
Add chicken and salsa to the Instant Pot. Cook for 12-15 minutes on Manual High and then shred.
2. Shred chicken using your hand mixer or two forks.
For super fast shredding, use your hand mixer! If you don’t have one, you can simply shred with two forks.
Add sour cream and cream cheese and cook on the saute function until melted. Add lime juice. Stir well and serve.
Instant Pot Creamy Salsa Chicken
- 1 lb chicken breast
- 2 cups salsa
- 4 oz cream cheese room temperature
- 1/2 cup sour cream
- Add chicken and salsa to Instant Pot. Set timer to 12 minutes. Let cook and then do 15 minutes natural release.
- Once done, release any remaining pressure. Shred chicken using a hand mixer or two forks. Switch to the saute function and add the cream cheese and sour cream. Let cook until cream cheese melts. Serve immediately.
