Hello everyone! Amanda here from Old House to New Home, sharing one of my go-to Instant Pot recipes, Creamy Salsa Chicken. I have been making salsa chicken for years, usually in my slow cooker, but I have to admit, it is even better in the Instant Pot, and way faster!

- Instant Pot
- Hand mixer, or just two forks
Supplies or Ingredients Needed:
These are the ingredients you’ll need. All the exact amounts are in the printable card at the bottom of this post.
- Chicken breast
- Cream cheese
- Sour cream
Making this could not be easier! Scroll to the recipe card at the bottom of this post for the entire recipe. Here’s just a really quick overview.
1. Cook chicken
The first thing you are going to do is cook the chicken in the Instant Pot. This is super fast, I love how quickly it cooks meat.
2. Shred The chicken
For super fast shredding, use your hand mixer! If you don’t have one, you can simply shred with two forks.
3. Add Sour cream and cream cheese
The final step is to add the sour cream and cream cheese. It’ll heat up super quickly again. And that’s it! You have some seriously amazing shredded chicken.
What other meat can you use?
I prefer chicken because it shreds so well. Plus, it cooks really quickly, which is important on busy weeknights.
But you can also make this with pork loin or shredded beef.
Instant Pot Creamy Salsa Chicken
- 1 lb chicken breast
- 2 cups salsa
- 4 oz cream cheese room temperature
- 1/2 cup sour cream
- Add chicken and salsa to Instant Pot. Set timer to 12 minutes. Let cook and then do 15 minutes natural release.
- Once done, release any remaining pressure. Shred chicken using a hand mixer or two forks. Switch to the saute function and add the cream cheese and sour cream. Let cook until cream cheese melts. Serve immediately.
