Ingredients

  • 6 boiled eggs chopped
  • ½ cup Greek yogurt
  • 1 tbsp relish
  • 2 tsp Dijon mustard
  • Salt and pepper to taste
  • Half a medium-sized tomato diced

Instructions

  • In a medium sized bowl, add chopped boiled eggs and Greek yogurt. Mix until well combined.
  • Add the rest of the ingredients: relish, mustard, salt and pepper, diced tomato, and mix thoroughly.
  • Serve as a sandwich using your favorite healthy bread (we prefer brown, whole wheat, or sourdough!)
