Summertime is here and it is time for lots of fresh produce for dinner! These Zucchini Pizza Boats are a great way to get your kids to try a new green vegetable and make the perfect side dish or main course for a light summertime dinner!

Hi everyone! Amanda here from Old House to New Home, sharing a great and easy summertime recipe, Zucchini Pizza Boats! While I love slow cooked comfort foods and cheesy dishes in the winter, my absolute favorite season for cooking is summertime. Give me a grill and fresh vegetables any day and I am happy!

Zucchini is one of those perfect foods that can be made into basically anything. I have used zucchini in bread, pizzas, salads, pasta, and in cakes. It is SO versatile and it can take on so many different flavors.

I love using it as a boat and stuffing it with our favorite ingredients. These pizza boats were a no-brainer! Everyone loves the flavors of pizza and this is slightly healthier without the crust!

These Zucchini Boats can be served as either a side dish or as a main course. You could pair it with some simple grilled chicken or alongside a juicy steak! If you want a light dinner, this is definitely filling enough on its own! Add some pepperoni or sausage if you want it heartier!

Zucchini PIzza boats:

hollow out the zucchini

These pizza boats are so easy. If you have never hollowed out zucchini, it is really simple. Cut the tips off the zucchini and then cut it in half longwise. Then use a spoon and scrape out the inside of the zucchini to form a hollow boat.

Make sure to season your zucchini with salt, pepper, garlic powder, and oregano before filling. This is your only chance to season the zucchini and it may be bland if you forget this step. Zucchini needs seasoning so don’t skip this step!

Fill the zucchini

I stuffed my zucchini with marinara sauce and cheese to be pizza-like, but there are lots of other topping options. You can use cherry tomatoes or fresh basil to fancy up your pizza. Add mini pepperonis or onions or peppers! Cooked crumbled Italian sausage would be delicious, too!

Zucchini Pizza Boats

This easy summer side dish recipe is a delicious take on pizza, made with zucchini!

Ingredients

  • 4 medium sized Zucchinis
  • 1 cup marinara or pizza sauce
  • 1 ½ cup shredded mozzarella cheese or provolone cheese
  • ½ tsp salt
  • ½ tsp oregano
  • 1/2 tsp garlic powder

Instructions

  • Preheat the oven to 400F.
  • Remove the zucchini tips and cut them in halves, longwise.
  • Use a small spoon to remove part of the interior of the zucchini to shape them like boats.
  • Sprinkle the zucchini with salt, garlic powder, and oregano.
  • Spoon the sauce in the interior of each zucchini. You don’t need to over-fill them.
  • Top the zucchini boats with the shredded cheese.
  • Bake them for 25 minutes or until zucchinis are fork tender and mozzarella is brown and bubbly.
