This easy Carrot Cake Oatmeal Bake is full of delicious flavor all thanks to its tasty ingredients like carrots, nuts, cinnamon and nutmeg.

Do I have to use quick oats?

For this particular recipe, you can also use rolled oats. I prefer quick oats because they are smaller in size and bake quickly and evenly. However, if you have rolled oats on-hand, then that is just fine.

Can I Substitute any of the ingredients?

Absolutely! If you prefer a stronger taste in your oatmeal bake, then replace the nutmeg with ground ginger.

If you’d like to control the sweetness of your Carrot Cake Oatmeal Bake, then omit the honey completely, and drizzle a little on top when serving. You can even omit the honey completely if you’d like to control the sugar levels.

Yes, this Carrot Cake Oatmeal Bake can be frozen for up to three months. Just wrap it in plastic, then wrap it in an additional layer of aluminium foil. Then, place it in a freezer bag.

To reheat it from the freezer, let it thaw until room temperature. Bake in a 350 degree oven for 10-15 minutes.

Ingredients

  • Cooking spray
  • 2 cups quick oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ¼ tsp salt
  • 1 ¾ cups almond milk
  • 2 large eggs
  • 1/3 cup honey
  • ¾ cup shredded carrots
  • ½ cup chopped nuts of your choice
  • Whipped cream in a can optional

Instructions

  • Begin by spraying a square pan with cooking spray and set aside. Preheat oven to 375 degrees F.
  • In a large bowl, add and mix together quick oats, baking powder, ground cinnamon, nutmeg and salt.
  • Next, add almond milk and eggs. Mix together until all ingredients are well-combined.
  • Add honey and mix thoroughly.
  • Fold in shredded carrots and chopped nuts.
  • Pour the oatmeal batter into the coated pan and bake for about 40 minutes. Allow to cool for 10 minutes then serve.
  • Top off with a dollop of whipped cream, if desired.
