I honestly couldn’t pick a favorite Christmas cookie recipe, but if I had to only eat one cookie for the rest of my life, I definitely think it would have to be peanut butter cookies! I know some people like their cookies crunchy, but I love a soft-baked cookie. Thick and chewy and super soft is the only way to eat a peanut butter cookie!

How to Make The best soft-baked Peanut butter cookies

The key here is in the baking! You need to use a silicone baking mat to help prevent too much browning on the bottom. It is also essential to bake these peanut butter cookies on the bottom rack, so I only bake one tray at a time. It is absolutely necessary to not over bake. I usually do 9 minutes, sometimes 10. They will set up once you remove them from the oven.

Absolutely! These cookies freeze extremely well, for up to one month in an airtight container. These are a great make ahead Christmas cookie recipe. You can also make the cookies about 5 days in advance and keep on the counter.

You can freeze the baked cookies. But another idea is to freeze the cookie dough. Then, you just need to let the dough thaw in the refrigerator about 24 hours before you bake them. Then they are ready to go.

How do you keep homemade peanut butter cookies soft?

This is one of my favorite hacks. Just store a slice of bread on top of the cookies in an airtight container. Then, keep the container on your countertop. I’m not kidding, the bread helps keep them soft somehow.

Cookie Dough

  • 1/2 cup salted butter 1 stick room temperature
  • 1/3 cup peanut butter do not use natural
  • 1/2 cup granulated white sugar plus more for rolling
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 1 egg room temperature

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with a silicone baking mat.
  • Mix together dry ingredients in a bowl. Set aside.
  • In the bowl of a stand mixer, add peanut butter and butter. Mix on medium until well combined.
  • Add sugars and then mix 2-3 minutes, or until well combined.
  • Add egg and vanilla. Stir to combine.
  • Slowly add in dry ingredients and mix for 30 seconds, do not overmix.
  • Take 2 tbsp of cookie dough and roll into a ball. Roll in granulated sugar and place on cookie sheet. Replace until no dough remains. Bake on bottom oven rack for 9-10 minutes. Remove promptly from oven and let sit on cookie sheet for 5 minutes. Remove from sheet and place on cooling rack.
  • Once cool, store in an airtight container for 5 days, or freeze.
