Amanda here from Old House to New Home, sharing a super tasty snack idea that is perfect for almost any occasion. These Bacon Wrapped Chicken Bites are sweet and salty and oh so delicious! This snack takes only 10 minutes to prepare and then the oven does most of the work!

Have you ever put brown sugar on bacon? Oh my goodness is it heavenly! The brown sugar caramelizes as the bacon cooks and the fat renders out and you get salty-sweet goodness that makes this chicken super flavorful and moist! This is the perfect appetizer to set out at a party.

I follow a strict formula when picking food for a party. I always do a sweet dip, a savory dip, a veggie-heavy option, and a meat option. These chicken bites are the perfect meat option and give you a break from serving cocktail meatballs, which are delicious but are served all the time.

Want to make these easy chicken bites for dinner? They are so good served with mashed potatoes or rice! My daughter loves bacon, we even had a bacon birthday party for her a few years ago, so I always have excited kids running to the kitchen when they smell bacon at dinnertime!

This is one of the very few recipes that I do not use salt and pepper because the bacon adds lots of salt. Since bacon is so fickle and some are saltier than others, I just leave the salt off the chicken so I don’t have too salty of a snack!

Serve this Recipe Immediately

I love a make-ahead recipe as much as the next person, but, no one wants to eat room-temperature chicken. Serve this immediately after removing it from the oven. If you want to make this recipe in advance, follow all the steps but stop before baking. Cover your pan tightly with aluminum foil and keep it refrigerated until ready to cook, for no more than 8 hours.

Use Thin Bacon

I love thick-sliced bacon as much as the next guy, but it takes thicker bacon longer to cook. Plus, thick bacon produced a lot more grease in the baking dish. It’s so much better if you use thin or regular-sliced bacon.

Serve With Honey Mustard Dip

If you like to snack on things with dips, then the best flavors for these chicken bites is going to be honey mustard. The chicken bites have a very sweet flavor, so you don’t really need a dip. I bet it would taste amazing with a BBQ sauce too.

Bacon Wrapped Chicken Bites

  • 1 1/2 pounds boneless skinless chicken tenderloins cut into bite size pieces
  • 1 pound sliced bacon cut into thirds
  • 1 ½ cups brown sugar
  • 1 teaspoon paprika
  • 1 tablespoon dijon mustard

Instructions

  • Preheat the oven to 350 degrees.
  • In a small bowl mix the brown sugar and paprika.
  • Sprinkle about a cup of the brown sugar mixture down the bottom of a 9×13 baking dish.
  • Wrap a slice of bacon around each piece of chicken and secure with a toothpick.
  • Place the chicken bites into the baking dish.
  • Mix the remaining brown sugar mix with the mustard.
  • Drizzle this mix all over the top of the chicken bites.
  • Bake for 15 minutes and then baste the chicken bites with the sauce in the bottom of the dish.
  • Bake for another 10-15 minutes.
  • You want the chicken cooked through and the bacon browned.
