Hey there Kenarry readers!! Is it summer bbq season yet? Trish here with a Cucumber Dill Dip recipe that is absolutely perfect for holiday gatherings, Mothers’ Day tea, pool parties, and BBQs. In my opinion, the combination of cucumber and dill scream “summer”.  I call this recipe an appetizer dip; of course, it could easily be considered a spread for sandwiches.

Instructions:

1. Prepare & Chop Veggies

Begin by peeling the cucumber then cut it into 3-4 pieces. Then cut the roots off of the green onions and cut them in halves. Add both the cucumber pieces and the green onions to the food processor then cover and process until the vegetables for your appetizer are finely chopped.

2. Cream & Mix Appetizer

Next, add the softened cream cheese and Worcestershire sauce to the food processor. Then process the four ingredients together until the dip for your Creamy Cucumber Dill Appetizer is smooth.

Use a spatula to transfer the creamy mixture from the food processor to a bowl then use the spatula to mix in the Dill Weed. If desired, add salt and mix until both seasons are well combined.

3. Chill & Serve

Cover the bowl then chill in the refrigerator for at least one hour. The longer the flavors have time to blend the better. Refrigerating this Creamy Cucumber Dill Dip overnight is best but I can rarely wait that long.

Serve this simple appetizer cold with pita bread, melba toast, crackers or raw veggies. If desired, garnish with additional diced green onion.

This is basically cream cheese and spices. So it will last about a week or so in the refrigerator. After about a week the texture will start to change.

Yes, I always prefer to use fresh herbs instead of dried if I have access to them. The fresh herbs will have a much more powerful flavor than the dried ones.
