Hello, foodie friends! Lisa from the Sugar Agenda blog here, ready to serve you with another tasty treat! Family and friends who are close to me know how much I have a soft spot for cookies. They are my absolute favorite dessert to bake. There are just so many ways to get creative with them!
Today, I am thrilled to share with you my recipe for Peanut Butter Sandwich Cookies. Let me tell you this: they did NOT last long in our household! My kids and husband just couldn’t get enough of them. I would often spot them reaching for another serving (and then another!). Before long, I had an empty bowl, filled with leftover crumbs of my delicious dessert.
I have always had a soft spot for sandwich cookies. Growing up, I remember craving Little Debbie Oatmeal Creme Pies whenever I’d watch “Honey I Shrunk the Kids.” These cookie give me that nostalgic feeling. Sure, their flavor profile is completely different from those Oatmeal Creme Pies, but the concept of sanwiching a cookie with the help of smooth buttercream really takes me back!

- Peanut butter
- Granulated sugar
- Brown sugar
- Eggs
- All-purpose flour
- Baking powder
- Salt
- Baking soda
- Powdered sugar
- Milk
Peanut Butter Sandwich Cookies Tips:
When Possible, use an Electric Mixer
Now, hear me out: electric mixers are key to baking, especially in the “creaming” step.
I love to use either a hand mixer or stand mixer when it comes to creaming my wet ingredients – especially when you’re dealing with softened butter (just like in this recipe). This assures that all ingredients will be well-combined and actually in cream form.
When you cream with just a spoon, it will take LOTS of elbow grease. You do not want chunks of butter in your cookie dough because it will lead to uneven baking and spreading.

I used a fork to give them their “criss-cross” fork marks. There’s actually a reason why PB cookies have these: it’s for more even baking!
Peanut butter cookie dough tends to be a lot denser than other traditional cookies (like chocolate chip cookies, for instance), so giving them fork marks helps with the baking process. It makes them flat for more even baking (whereas other cookies spread on their own).
Peanut Butter Sandwich Cookies
Ingredients
For the Cookies
- 1 stick unsalted butter softened (approx. ½ cup)
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar packed
- 2 large eggs room temperature
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 ½ tsp baking soda
For the Filling
- 5 tbsp unsalted butter softened
- 3 tbsp peanut butter
- 2 cups powdered sugar
- 1 tbsp milk
Instructions
- Begin by preparing the cookies. Line a baking sheet with parchment paper and set aside. Preheat oven to 375 degrees.
- In a large bowl, cream together butter, peanut butter, both sugars and eggs.
- Once all ingredients are creamed together, add dry ingredients: flour, baking powder, salt and baking soda.
- Once the ingredients are well-combined and have formed a cookie dough, roll into 1 inch balls and place on the lined baking sheet, about 1 ½ to 2 inches apart from each other. (To make 24 cookies, you will need to bake in batches. Normally, 12 cookies can fit on a standard-sized cookie sheet).
- You will have leftover cookie dough, be sure to wrap in plastic and refrigerate for up to 7 days for later use.
- Flatten each cookie with a fork, using a crisscross pattern. Bake for 8-10 minutes. Allow to cool completely before adding the filling.
- To make the sandwich filling, add all ingredients to a large bowl and use an electric mixer to mix all of it together.
- Flip over half of the cookies and use a piping bag to frost them with the peanut butter filling. Sandwich each one with an empty cookie.
- Serve and enjoy!
