If you’re craving something chocolate-y but don’t want to spend all day in the kitchen, then my Brownie Mix Cookies are the way to go! Remember my Gingerbread Cupcakes? Well, this is the same concept in the sense that we’re using a pre-made mix to make something new! Today we’re using a brownie mix to make some delicious cookies! Yes, double the chocolate for double the goodness!

How to Make Brownie Mix Cookies

These Brownie Mix Cookies are the best of both worlds: brownies and cookies fuse together to form the ultimate chocolate treat!

If you have ever wondered, “can you use brownie mix to make cookies?” The answer is, “yes!” The entire recipe is in the printable recipe card at the bottom of this post. I’m going to share a few tips and answer a few questions first.

How Much Brownie Mix Will I Need?

My Brownie Mix Cookies require an entire standard-sized box of brownie mix – which is usually around 18 oz. in-size. This yields to about 3 cups of brownie mix.

Can I Add More Ingredients to These Cookies?

Yes! The best part about these cookies is that you can add the flavors/toppings to make them your own! We went simple and only added some chocolate chips, but feel free to add some nuts, dried fruit, shredded coconut etc.

In terms of ingredients, be sure to stick with the standard butter and egg as indicated in the recipe below. However, the fillers/toppings are up to you! Let your imagination (and taste buds!) go wild!

What Brand Brownie Mix Should I Use?

You may use any brownie mix that your heart desires! Just be sure to stick around the 18 oz. boxes as the measurements of this particular recipe requires that size. Some boxes are more, some are less – but standard is around the 18 oz. mark.

Some of our favorite brownie mix brands include Betty Crocker and Ghiradelli.

Brownie Mix Cookies

These Brownie Mix Cookies are an absolute delight – and so easy to make! They're double the chocolate for double the goodness!

Ingredients

  • 3 cups brownie mix or standard-sized box 18 oz. brownie mix
  • 1/2 cup butter melted
  • 1 egg
  • 3/4 cup chocolate chips

Instructions

  • Line a baking sheet with parchment paper and preheat oven to 350 degrees
  • Add all ingredients except for the chocolate chips in a large bowl. Mix until a cookie dough forms.
  • Fold in chocolate chips.
  • Roll the cookie dough into 1 1/2 inch spheres and place gently on lined baking sheet, about 1 1/2 inches apart from each other.
  • Bake for 10 to 12 minutes.
  • Allow to cool on a wire rack.

Notes

Add any toppings or mix-ins that you want.
